In my previous article I have described how to create simple way with some (spelled) your own sourdough starter flour, water, and every day a minute attention. I am now a month since completely switched to bake bread. The more I do it the easier it will become and the faster I'm done. It's actually a really small effort! It strikes me anything except how much work it is. We used a bread 4.40 euros lost in the organic supermarket and now I own my bread bin I buy those big bags of 5 kg where I think I have 8 to 10 loaves can bake. Such a bag cost me 14 euros, so you do the math that's what a savings. Your own homemade bread also tastes veeeeeeeel better than the bread of the store, which is actually still the main reason to make it yourself, and since you're so sure that there is not tampered (with your bread no chinese human hair ieeghhh). I'm nice to been experimenting with spelled flour. Spelt flour is different from wheat flour, wetter and you do not have to knead, as long as the recipe for a wheat sourdough bread, you can not replicate one on one with spelled. Here he comes, my spelled sourdough bread recipe for your simple, inexpensive, fresh and delicious sandwich!
Spelt sourdough bread recipe
500g spelled flour
125g sourdough starter
Celtic sea salt 2 tablespoons ground
250 grams of water

1) Mix the flour with the salt in a bowl.
2) Pour into a well of water and the sourdough starter and knead all well. I count the number of kneading, about 200-300 beats by spells. If you get too long knead the dough grainy because you break the gluten. Knead so not too long. the dough should not be too dry or too sticky, so see if you water or flour still need to add. You must be able to draw. Long wires
3) Let the dough rise for about 6 hours. I put the night before the dough is ready, it can rise all night.
4) Knead then again all the air out and put it two hours away in your bread pan with a plasticje over it.
5) Preheat oven to 225 degrees and put the bread in the oven for about 35 minutes.
6) allow the bread to cool slowly rolled up in a towel, the crust is crispy.

variation: sprinkle some poppy seeds, pumpkin seeds, sunflower seeds over the top of the bread before reaching into the oven and press a bit tight.
I bake the bread in the oven and not in a bread machine, these have often been made for wheat and yeast.
